From Bindi's 1988 plantings on the slopes of mighty Mount Gisborne, the fruit is selected from the middle and lower sections of the site, where the quartz rich soils are not quite as compacted and inflected, but still pretty to look at it for geologists. Winemaking is pretty simple, pick, de-stem, SO2, barrel, lees for nine months, part malo, sterile filter, bottle.
